Changes in Fatty Acid Composition in Muscle of Largefin Longbarbel Catfish Mystu macropterus |

Abstract Fatty acid composition was analyzed in the muscle of largefin longbarbel catfish Mystus macropterus by gas capillary chromatography. The results showed that there were 22 fatty acids in the muscles,the predominant fatty acids,in terms of relative proportion,being C18:1n-9(22.38%~37.57%) ,followed by C16:0(18.86%~23.95%) ,C16:1n-7(7.00%~11.52%) ,and C18:2n-6(7.46%~9.97%) . The proportion of EPA and DHA were relatively high,accounting for 3.74% and 5.22%,respectively. Eight saturated fatty acids (SFA) ,6 monounsaturated fatty acid(MUFA) and 8 polyunsaturated fatty acids (PUFA) were found in the muscles. Fatty acid composition showed difference in the muscle in the pre-spawning and post-spawning.
