Comparative Analysis of Nutritional Quality Difference of JellyfishRhopilema esculentum between Dandong and Yingkou Regions inLiaoning Province

Abstract:To compare the nutritional quality differences of pond-cultured jellyfish Rhopilema esculentum in Dandong and Yingkou regions of Liaoning Province, biochemical analysis methods were used to analyze the nutritional components, amino acids, and collagen content in five tissues (bell, gonad, circular muscle, scapulet, and oral arm). The results showed that the bell had the highest ash content (62.19±6.44)% and the lowest crude protein content (13.86±0.77)%, which were significantly different from those in the other tissues (P<0.05). The circular muscle had the highest crude protein content (48.55±1.45)% and crude fat content (10.19±2.03)% while the gonad had the highest total sugar content (3.82±0.45)%. Compared with R. esculentum from Yingkou region, bell, circular muscle, and scapuletof R. esculentum from Dandong region had higher crude protein contents (P<0.05), while oral arm had lower crude protein, and sugar contents (P<0.05). Glutamic acid, glycine, and aspartic acid were the main amino acids in all tissues, without significant differences in amino acids contents in each tissue between two regions (P>0.05). The average collagen content of R. esculentum was found to be ranged from 3.34% to 10.01%, with oral arm and scapulet having the highest collagen content among all tissues (P<0.05). And there was no significant difference in collagen content of each tissue between two regions (P>0.05). These findings indicate that R. esculentum is an excellent protein source, characterized by a balanced amino acid composition and abundant collagen, which provides essential basic data for quality breeding and refined processing of R. esculentum. The nutritional quality difference among the five tissues is greater than that between Dandong and Yingkou regions.
