Abstract A full scan of ultraviolet spectrophotometer was applied to detect gonad saponins of starfish As‐terias rollestoni ,and then removal conditions of the saponin were optimized by response surface method . Conditions of utilizing response surface method Box‐Bohnken were approximated to integer of ultrasonic time of 13 min ,ethanol concentration of 4 .5% ,and removal times of 2 .Three verification experiments under these conditions revealed that there was average saponins content of 0 .094 mg/g in residues ,ap‐proximated to the predicted figure of the model .Contrast to the 0 .325 mg/g before ,there was a removal ratio of 72 .3% ,indicating that the model of gonads saponin removal was established in success .
