Abstract：The contents of crude protein, fat, ash, moisture, and amino acids were determined in the muscle of brownmarbled grouper Epinephelus fuscoguttatus. It was found that the fish had a dressed body weight of 77.3%. There were 18.8% of crude protein, 2.2% of crude fat containing 28.28% of DHA and EPA in total fat, 1.16%of crude ash and 77.1% of moisture in the muscle. The total amount of amino acids (AA) was 18.22% in wet mass, in which the essential amino acids comprised of 6.88%, in the muscle. The total amount of the delicious amino acids was found to be 8.53%. The essential amino acids index (EAAI) was 514 in the muscle, accorded with the FAO/WHO standard.
